History

Stellar Winery is one of South Africa's largest producers of fine organic wines, the grapes are drawn from vineyards straddling the northern boundary of the Olifant's River wine region and Namaqualand. This is an area famous for its spring flowers and is also the only semi-arid Biosphere hotspot in the world

Situated in the Namaqualand hamlet of Trawal, Stellar Winery is privately owned, with the workers having a 26% shareholding in the cellar

Vinification Details

Before de-stemming and crushing, hand-picked grapes are cooled to 0C. The low temperature of the crushed grapes makes it possible to avoid the use of sulphur dioxide (SO) at this stage, as low temperatures inactivate bacteria and yeast. This allows for a cold soak for a few days before fermentation starts. At the end of this soaking period the juice and grapes are allowed to warm and are then inoculated with selected yeast. Temperatures are regulated to around 25C
