History

Santa Carolina, founded in 1875 and currently owned by the Larrain family, proudly champions Chilean Heritage with a focus on innovation. Regional Information

The Colchagua Valley is the largest and southernmost of the Rapel sub-appellations. Colchagua is closer to the lowest part of the Coastal Range and is benefitted by the refreshing sea breeze.

Vinification Details

Cold maceration. Traditional fermentation at controlled temperatures (28C / 82F) in cement tanks. 10% gets post-fermentation maceration. 40% gets malolactic fermentation in French oak barrels. The blend has 8 months of french oak barrel ageing and it is bottled one year later.
