Storage

Sparkling wines and Champagne should always be stored in a cool and dry place away from light and heat sources. The ideal temperature for storage is 13-15 degrees C.

Warning:Sparkling winescontain high natural pressure. Do not allow bottles to get warm. Chill bottle before opening and avoid shaking. Point bottle away from others and yourself when removing wire, hood and cork. Hold the cork firmly and twist out slowly by hand. Never in any circumstances use a corkscrew to open.

The philosophy of Oyster Bay is to produce fine, distinctly regional Super Premium wines that are elegant and assertive, with glorious fruit flavours. Oyster Bay produces wines from the renowned regions of Marlborough and Hawke's Bay.
Regional Information
The Hawke's Bay wine region is arguably the most exciting find for the cultivation of sparkling wine in New Zealand. Ancient alluvial river terraces provide for a superb mix of soils over gravelly, free-draining sub soils, with an abundance of pure river water for irrigation. With a temperate maritime climate, the vines are warmed by strong clear sunlight during the day and cooled at night by the sea breezes of the Pacific Ocean.

Vinification Details
Oyster Bay Sparkling Cuve Ros is a skilful blend of Pinot Noir and Chardonnay. Upon receipt at the winery, the fruit is gently pressed for skin contact. The juice undergoes a primary, slow fermentation in tank, then the wines are blended to create the Cuve. A secondary fermentation is undertaken to naturally impart delicate bubbles. Following a short period of lees contact, the wine is bottled young to capture the fresh, varietal intensity. The result is an elegant, finely bubbled Sparkling Ros.
