Suave, with rich layers of black cherry tart, raspberry gele and dried violet enriched with licorice and espresso undertones, all enveloped by glossy tannins. Earl grey tea, clove and wild herb elements dovetail on the finish. Syrah, Grenache, Mourvdre and Carignan. Drink now through 2028.
History
The Clos was delimited in 2000. Biodynamic cultivation is an obvious choice for the soils that called for the creation of this place.
Regional Information
The 9-hectare vineyard, surrounded by dry stone walls, is located in the commune of La Livinire in the Minervois, at an altitude of 220 metres. It is located near the Montagne Noire.

Vinification Details
The macerations are carried out in the thermo-regulated concrete vat room, each plot and grape variety separately. The Syrah is vatted and vinified with the grapes completely de-stemmed. The Grenache and Mourvdre grapes are de-stemmed and lightly crushed during vatting. The maceration is gentle, limiting the extraction of tannins. The Carignan is vatted in whole bunches, then vinified at a fairly high temperature to encourage aromatic extraction. The wines are aged for 12 months in French oak barrels.
