Vinification Details
Unique yeast strains are inoculated from the region surrounding the winery and the culture is monitored in the onsite specialised yeast laboratory, which is one of only a handful in Italy.
The wine undergoes an extended secondary fermentation process of 60 days to gain complexity and to refine the mousse. It is then fined through a ceramic filter, producing a crystal clear vegan certified wine.Producer
